Materia Medica; gebruikte delen

Bewaartijd maximum 18 maanden. Beschrijving: Dunne, houtige (vooral onderkant) stengels, vertakt.

"Decreased oxidative stress and regulation of the PGC-1-alpha protein expression are not considered as underlying molecular mechanisms", schrijven ze.

[The EFSA Journal (2008) 721, 1-29.]

Antibacterial

Thyme extract has demonstrated activity of thyme extract against Escherichia coli, Listeria monocytogenes, Streptococcus mutans and Salmonella enterica in vitro (Burt et al 2005, 2007, Fabian et al 2006, Friedman et al 2002, Hammad et al 2007, Schelz et al 2006, Solomakos et al 2008).

Aqueous thyme extract also has a significant inhibitory effect on Helicobacter pylori, reducing both its growth and its potent urease activity in vitro (Tabak et al 1996).

The essential oil of thyme also has potent antibacterial properties as demonstrated in vitro against a wide range of pathogens, including clinical bacterial strains of Staphylococcus, Enterococcus, Escherichia and Pseudomonas genera, Clostridium botulinum, Haemoph- ilus influenzae, Klebsiella pneumoniae, Salmonella typhi, Brochothrix thermosphacta and P. acnes (Kalemba & Kunicka 2003, Schmidt et al 2012, Sienkiewicz et al 2011, Zu et al 2010).

T. vulgaris essential oil also exhibits better inhibitory effects against H. pylori than essential oil from Eucalyptus globulus (Esmaeili et al 2012). In vitro tests have also identified antibacterial activity against four Gram-negative food-borne bacteria (Escherichia coli, Salmonella abony, Pseudomonas aeruginosa and P. fragi) (Schmidt et al 2012).

Multi-drug resistant bacteria

Emerging in vitro evidence suggests that thyme essential oil has activity against multidrug resistant strains of Staphylococcus, Enterococcus, Escherichia, and Pseudomonas genus (Sienkiewicz et al 2012). Thyme essential oil may enter the extracellular matrix, cell membrane or cell wall of bacterial biofilms, eradicating bacteria within biofilms with greater efficiency than certain antibiotics (Kavanaugh & Ribbeck 2012). Thyme extract and essential oil potentiates the antibacterial effects of tetracycline against methicillinresistant Staphylococcus aureus in vitro (Fujita et al 2005, Warnke et al 2009, Sienkiewicz et al 2011). The antibacterial activity of thyme essential oil against antibiotic resistance strains (such as MRSA) is probably due to the significant content of thymol (48.1%) (Tohidpour et al 2010).

Antitussive and antispasmodic effects

These actions have been attributed to the phenolic compounds in thyme (WHO 2003). Antispasmodic effects on guinea pig trachea and ileum have been demonstrated for these constituents and for the whole extract of thyme (Engelbertz et al 2008).

Expectorant

The saponin content is believed to have expectorant activity, as demonstrated in animal studies. An in vivo trial has demonstrated improved expectoration and mucociliary clearance (Wienkotter et al 2007).

Antiviral

Thyme oil demonstrates antiviral activity against HSV-1, HSV-2 and an aciclovir-resistant strain of the virus (Koch et al 2007, Nolkemper et al 2006, Schnitzler et al 2007). One study found that the oil decreased plaque formation by more than 90% when preincubated with HSV-2; however, no effect was observed when the oil was added prior to infection or after the absorption stage (Koch et al 2007). It was suggested that thyme essential oil interferes with the viral envelope.

Candida vaginitis

A prospective, single-blind, two-stage clinical trial involving 64 women found that a topical cream containing garlic and thyme was as effective as clotrimazole treatment for candidal vaginitis (Bahadoran et al 2010). Treatment was used for 7 nights by both groups. Clinical symptoms were decreased by at least 50% in more than 83% of women using the herbal cream compared to 92% in the clotrimazole group, but the difference was not significantly different.

Antioxidant

Thyme and thymol exhibit significant antioxidant activity according to both in vitro and in vivo research. Several in vitro studies have investigated the antioxidant effects of thyme (Braga et al 2006a, Chizzola et al 2008, Lee et al 2005, Tsai et al 2011). One study found that eugenol, carvacrol, thymol and 4-allylphenol (5 mcg/mL) all inhibited the oxidation of hexanal for a period of 30 days, demonstrating potent antioxidant activity comparable to alpha-tocopherol (Lee et al 2005). Other research reveals that thyme had significant antioxidant effects in a N-nitrosodiethylamine-induced oxidative stress model in rats (Rana & Soni 2008), and that thyme essential oil exhibited a dosedependent protective effect against aflatoxin-induced toxicity in rats (El-Nekeety et al 2011). Thyme aqueous extract has been shown to increase the activity of glutathione peroxidase in serum, liver and brain tissue of rats exposed to alcohol toxicity indicating an ability to increase antioxidant capacity in vivo (Shati & Elsaid 2009). The polyphenol content of thyme is most likely to be responsible for its antioxidant activity.

History of Thymus

For thousands of years, thyme has been a superstar of the herb garden. As an antidote for poison, a plague preventative, a symbol of bravery in battle and a stalwart companion to the grave, thyme has a far more storied past than you’d think if you were walking past it in the supermarket today.

Thyme’s reputation as a healer and protector goes back thousands of years. In the Roman era, it was widely held that eating thyme either before or during a meal would protect you from poison. For obvious reasons, this made the herb a particular favorite of the emperors. It was even said that a bath in warm water liberally dosed with thyme could stop the effects of poison after it was inadvertently consumed.

Thyme was also associated with courage, bravery and strength in ancient times. Roman soldiers exchanged sprigs of thyme as a sign of respect. Greeks and Romans burned bundles of thyme to purify their temples and homes, and to evoke a spirit of courage in those who inhaled it.

The association with courage and bravery persisted into the Middle Ages. Thyme was a traditional gift offered to men going into battle. Most soldiers would just cram these fragrant charms into their pockets or purses, but some were known to attach thyme to their clothing or armor as a visible badge of honor. When worn into battle, thyme might serve double duty: used as an embalming herb since the time of the Egyptians, it was thought to be a powerful aid to those making their passage into the next life.

When the Black Death struck in the late 1340s, millions of people turned to thyme for relief and protection. Many of the day’s medicinal concoctions—from posies worn about the neck to poultices applied directly to plague-blistered skin—included the herb as a major ingredient. Though there was little science to these remedies, one of the chemical compounds found in thyme is a powerful antiseptic. Known as thymol, it’s still widely used today in mouthwash, hand sanitizer and acne medication.

The Victorians placed their own fanciful spin on the mystical properties of thyme. They considered a patch of wild thyme in the woods to be a clear and incontrovertible sign that fairies had recently danced the night away on that very spot. Generations of little girls camped out near remote little plots of creeping thyme, hoping to catch a glimpse of a tribe of woodland fairies. But the Victorians also had more prosaic uses for thyme. Well before the mechanics of infection were fully understood, 19th-century nurses were bathing bandages in a dilution of thyme in water.

All along, of course, thyme remained one of Europe’s favorite cooking herbs (along with the ever-popular rosemary and sage). Monasteries, which served for hundreds of years as the keepers of medicinal knowledge as well as the art of keeping a good kitchen garden, made frequent use of thyme in their breads, soups and roasts. In the days before refrigeration and food safety laws, including thyme in recipes gave you at least some protection against spoiled meat and foodborne disease.

Now that you’ve heard the tale of thyme, celebrate the herb’s rich history in your own kitchen. The following is adapted from an old Benedictine recipe for mushroom-thyme soup.

MUSHROOM-THYME SOUP

1 clove garlic, minced

2 medium shallots, finely chopped

1 tablespoon olive oil

8 ounces cremini mushrooms, thinly sliced

4 ouces shiitake mushrooms, stems removed and caps thinly sliced

2 tablespoons fresh thyme, finely chopped

1 tablespoon fresh sage, finely chopped

6 cups vegetable stock

Salt

Pepper

Sauté the garlic and shallot in the olive oil over low heat until the shallots are translucent. Add the mushrooms, thyme and sage, and stir together over low heat for about 1 minute. Add the vegetable stock. Bring to a rolling boil and then reduce heat and simmer uncovered for 15 minutes. Add salt and pepper to taste.
