Oxalis species / Klaverzuring / Oca

Klaverzuring (Oxalis) is het grootste geslacht binnen de Klaverzuringfamilie. Het geslacht komt in vrijwel de hele wereld voor, behalve in de poolgebieden. De soortendiversiteit is vooral groot in tropisch Brazilië en in Zuid-Afrika.De planten zijn eenjarig of overblijvend. De bladeren zijn in drie tot tien ronde, hartvormige of lancetvormige blaadjes, gegroepeerd in een krans met alle bladen even groot. Ze lijken sterk op klaver, maar bij klaverzuring is het middelste blad iets groter. De bloemen hebben vijf kroonbladen, gewoonlijk aan de basis vergroeid, en variëren in kleur van wit, roze, geel tot rood. De vrucht is een kleine capsule (doosvrucht) met verscheidene zaden.

Antioxidants in spring leaves of Oxalis acetosella L

Oxalis acetosella L. is a common, edible wild plant native to the northern hemisphere. The contents of selected antioxidants, and the antioxidant capacity of young and old spring leaves of O. acetosella, were evaluated. The present study reports foliar contents of ascorbic acid, tocopherols, carotenoids, chlorophyll, flavonoids, phenolic acids and total phenolics, and compares the nutritional value of O. acetosella with other cultivated and wild plants. The composition of foliar antioxidants was found to depend on leaf age. On the other hand, the antioxidant capacity of old leaves were in the same range as young leaves. A comparison between O. acetosela with lettuce analysed in our study, and with numerous cultivated and wild edible plants from other studies, showed that O. acetosella is very rich in β-carotene, ascorbic acid, tocopherols and xanthophylls, and that it is one of the best sources of flavonoids (flavonol glycosides and flavan-3-ols), especially rutin. Therefore, O. acetosella is a potentially important dietary source of antioxidants.

Oca / Oxalis tuberosa

OCA Klaverzuring-knolletjes zijn afkomstig uit het Andes-gebergte, waar ze op maar liefst 3000 meter hoogte worden geteeld. Bij ons in Nederland is OCA Klaverzuring nog nagenoeg onbekend, maar in het Andes-gebied is het volks-voedsel na de Aardappel, en in Nieuw-Zeeland ook zeer populair. Klaver-zuring draagt de naam van twee planten, Klaver omwille van de vorm van de blaadjes en Zuring door de fris-zurige smaak ervan.

OCA heeft heerlijk frisse en zoet-zurig smakende knolletjes in verschillende vrolijke kleuren : Wijn-rode, oranje, Zacht-roze, gele en witte. De heerlijke tamelijk gladde, bijna bolvormige knolletjes zijn zowel rauw, door salades, als gekookt, in roerbak-gerechten en gefrituurd te gebruiken, ze behoeven niet geschild te worden. De smaak is als aardappel met een prettige, licht-zurige na-smaak, deze verdwijnt echter als men de knolletjes een paar dagen ‘in de zon’ laat liggen, ze worden dan bloemig en er komt een zoete smaak voor in de plaats.

De jonge klaverzuring-scheutjes met klaver-blaadjes en de oranje-gele bloemetjes van OCA zijn sierlijk en lekker pittig in salades, maar ook uitermate geschikt voor garnering !

Oxalis tuberosum in de tuin: Oorsprong Andesgebergte, Zuid Amerika. Niet winterhard, halfzon tot zon, groene plant, goed doorlaatbare humusrijke grond. Bloei, wit, eind september, voorkweken in maart, april in pot en na de ijsheiligen uitplanten op 30 cm, voor goede productie niet meer na eind mei uitplanten. Alle soorten zijn daglengtegevoelig( uitgezonderd de roze in New Zeeland gewijzigde cultivar, is enkel weken eerder productief. Oogsten na of net voor de eerste vorst, eind november voor grote productie ( tot 3 kg per plant). Of beschermen met vliesdoek bij vroege vorst, vorstvrij bewaren, koel in potgrond bewaren. Blad verdwijnt bij de eerste vorst, vorstvrij overwinteren. Vermeerdert zichzelf ondergronds door de uitlopers en tuber (knollen). Opbrengst gemiddeld 1 kg tot 3 kg bij rijke grond( goed gemulcht en eind augustus beetje aanaarden) In Europa is het oxaalzuur gehalte aanvaardbaar zoals spinazie ( voor de iets zoetere roze cultivar) tot het gehalte van zuring of zurkel voor de andere kleuren. Bij blootleggen aan daglicht gedurende 70 tal uren, wordt het oxaalzuur minimaal en bij vervolgens koken bijna nihil.

In honing gebakken oca's met gember en limoen

    • 1 kg oca's, schoongemaakt en geschrobd

    • 4 el olijfolie

    • 2 el milde honing

    • 2 teentjes knoflook, geperst

    • zeste van 1/2 limoen

    • 1 tl chilipoeder

    • 1/2 tl gemberpoeder

    • 1/2 tl zout

    • 1 tl gehakte verse citroentijm

    • 1 tl gehakte verse basilicum

Bereiding

Verwarm de oven voor op 200°C.

Halveer de ocas in de lengte en leg ze in een ovenschaal.

Meng in een kleine kom olijfolie, honing en knoflook en bestrijk de oca's licht met dit mengsel.

Meng de limoenzeste met chilipoeder, gember, zou, tijm en basilicum.

Strooi dit mengel over de ocas en bak ze 30-45 minuten tot ze gaar zijn en de randen gekarameliseerd zijn.

Gekarameliseerde oca's

    • 100 g oca's

    • appelsap

    • 1 eetlepel honing

    • eventueel wat kaneel

Bereiding

Was en snij de oca's, leg ze in een steelpan en overgiet ze met appelsap tot ze net onder staan. Voeg de honing toe.

Laat het geheel inkoken tot het vocht verdwenen is.

Kruid de oca's af naar smaak met wat kaneel.

Andean roots and tubers are underexploited crops; many contain compounds beneficial to health, so a greater knowledge of their properties is important for encouraging their consumption. The aim of this work was to study the content of bioactive compounds of yacon and oca and their effect on intestinal health using as a model rats of the Wistar strain. Two varieties of ocas (Overa and Rosada) and yacon, which contain significant amounts of fructooligosaccharides and phenolic compounds, were chosen. Rats of the Wistar strain were fed for two months with diets containing these foods in amounts sufficient to provide 8% of fiber. A significant decrease in pH values and an increment in lactobacilli and bifidobacteria counts in the cecum of rats fed with inulin, oca Rosada and Overa were observed; there was no significant decrease in enterobacteriaceae and enterococci counts. The cecum antioxidant activity was incremented in rats fed with the experimental foods with respect to the control diets. The components of dietary fiber and phenolic compound contents in yacon and oca produce effects that contribute to the intestinal health of the experimental animals.

Nutritional Value and Health Effects of Oca

A 100-gram (3.5 oz) serving of oca provides almost 40 milligrams of vitamin C, an important antioxidant that plays a key role in maintaining a healthy immune system and preventing premature aging. The amount of vitamin C found in 100 grams of oca equals to more than 60% of the daily value for vitamin C!

Some varieties are also loaded with iron (up to 70% of the daily value); however, other oca varieties have been found to contain much less iron. Oca is also an excellent source of zinc (100 grams of oca covers 12% of the daily value for zinc) and vitamin B2 (55% of the daily value). Furthermore, oca is a good source of fiber, with a 100-gram portion of oca providing around 8 grams of dietary fiber. In addition to vitamins, minerals, and macronutrients, many oca varieties are also notable sources of anthocyanidins and other flavonoids.

In addition to being a valuable source of nutrients, oca is very low in calories, which makes it a great, healthy weight loss food for overweight people. A 100-gram serving of unpeeled oca delivers only about 30 calories (kcal).

There are several ways to reduce the oxalic acid concentration of an oca-containing meal. One way is to select a variety that is lower in oxalic acid. South American farmers distinguish between two types of oca, sour and sweet, of which the latter is low in oxalic acid. If you live in New Zealand and want to reduce your intake of oxalic acid from oca, you might want to opt for the relatively newly introduced cultivars 'Mellow Yellow' and 'Apricot Delight'. According to a 2001 study published in the Journal of the Science of Food and Agriculture, these varieties contain less oxalic acid than the traditional pinkish-red cultivar.

Furthermore, peeling oca can have a great impact as the oxalic acid in oca is concentrated in the skin. If you're planning to cook oca, it is best to peel the tuber before cooking it if you want to limit your intake of oxalic acid. The same study that compared the oxalic acid content of oca varieties grown in New Zealand found that baking, steaming, and boiling oca causes a migration of oxalic acid from the skin to the underlying flesh.
