Helianthus tuberosus / Aardpeer

De aardpeer ofwel topinamboer is de eetbare knol van de plant Helianthus tuberosus. In Frankrijk en België noemt men deze grillige knollen ook wel topinambour, in Engeland tracht men ze wat grandeur te verlenen met de naam Jerusalem artichoc. Bij boerderijen zijn de gele zonnebloem-achtige bloemen gangbaar als erfafscheiding. Boeren noemen het ook wel "Russische aardappelen". Een volgende en logische stap die de calculerende agrariër zet, is het verwerken van de knol tot veevoer. Maar ook voor lekkerbekken is het bekende kost, verkrijgbaar op de biologische markt, via het groentekistje of de moestuin. Een knol met een rijke en lange geschiedenis. Om het hier kort te houden: volgens The Oxford Companion To Food zou de alternatieve naam Jerusalem artichoke kunnen dateren uit 1616, toen de knol vanuit Nederland overwaaide naar Engeland.  

De knol bevat inuline, een zetmeelachtige stof die onverteerbaar is. Dit veroorzaakt volgens de Companion "a filthy loathsome stinking wind within the body, thereby causing the belly to be pained and tormented, and are a meat more fit for swine than men". 

De smaak van de knol is lichtzoet en heeft iets weg van een artisjok. Op het gebied van 'standing' kan je de artisjok en aardpeer toch moeilijk met elkaar verwarren. Terwijl aardpeer lijkt aangetast door artritis en marktkramers ze uit schaamte in een klein hoekje van het uitstalraam wegmoffelen, wordt artisjok algemeen als een van de edelste (en duurste) groentensoorten beschouwd. Misleidend, zo blijkt, want de smaak van aardpeer is werkelijk voortreffelijk. Gekookt, gebakken of gestoofd is de smaak te vergelijken met schorseneer en artisjok. De vroege oogst is rauw ook heel lekker, knapperig en zoet. 

In de keuken

jonge aardpeer (oktoberoogst) kan met schil en al gegeten worden, schoonboenen en wassen is dan voldoende. De kooktijd is 5-10 minuten, afhankelijk van de grootte van de knol. Kook aardperen niet langer dan nodig is, want dan worden ze slap en week. Voeg citroensap toe aan het water van de geschilde aardperen om bruinverkleuring te voorkomen. De knol heeft een hoog ijzergehalte. De aardpeer is prima geschikt voor een smakelijke puree of als fritters in de frituur (schijfjes). Aardpeer is door zijn volle grondsmaak lekker bij riviervis en wild. Aardpeer wordt ook verwerkt tot fluweelzachte soepen. Nu enkele recepten: 

Kruidige aardpeer

Ingrediënten: 500 gr aardpeer, 1 teentje knoflook, 1 ui, 2 eetl zonnebloemolie, 3 eetl tomatenpuree, 2 dl water, 2 theel oregano, 2 theel lavas, 1 eetl tamari. Snijd de topinamboer in plakken van 1 cm dik. Hak de ui en knoflook en fruit in de olie. Voeg de topinamboer toe en laat nog een paar minuten sudderen. Roer af en toe om. Voeg nu tomatenpuree, water, kruiden en tamari toe. Meng alles goed en laat zachtjes in een kwartiertje tijd gaar koken. Opdienen bestrooid met fijngehakte peterselie. 

Gezondheid

De aardpeer is licht verteerbaar. De knol slaat geen suiker op, maar in plaats daarvan "inuline". Deze suiker is goed voor diabetici. Inuline wordt zelfs helemaal niet verteerd als zetmeel maar eerder gefermenteerd tot voor de dikke darm nuttige zuren die ook de darmflora gunstig beïnvloeden. Daar ligt dan vooral de gunstige werking zowel voor suiker- als niet suikerzieke personen. Daarnaast bevat aardpeer ook nog biotin (een vitamine), calcium, silicium, ijzer en natrium (mineralen). De groente heeft mogelijk ook een weldadig effect op reuma, jicht en verstopping. 

Teelt

Deze oersterke groente is winterhard, dus zet de knollen aan de rand van uw tuin. De plant wordt wel twee meter hoog, gebruik ze dus als windscherm.

Rassen

Aardpeer is goed voor mensen met diabetes.  

Het is dan echter wel beter om de aardpeer rauw te consumeren. Geraspt, door een salade of in plakjes gesneden kan het vrijwel overal rauw in verwerkt worden. De bloedsuikerverlagende werking wordt in een drievoud veroorzaakt door de grote aanwezige inuline in de aardpeer. Inuline is een oplosbare vezel, wat koolhydraten vasthoudt. Hierdoor verloopt de spijsvertering langzamer, wat de bloedsuikerspiegel niet zo snel doet oplopen. Inuline is tevens een koolhydraat wat door de mens niet kan worden verteerd. Hierdoor loopt de bloedsuikerspiegel ook niet op. Als laatste bindt de oplosbare vezel zich met water wat sneller een verzadigingsgevoel geeft. Dit voorkomt overeten. 

Wordt aardpeer gekookt, wordt inuline omgezet in fructose. Gekookte aardpeer is hierdoor zelfs mierzoet te noemen. Sommige echte ambachtelijke banketbakkers gebruiken gekookte aardpeer als zoetmiddel in hun taart en gebak. Inuline zorgt tevens voor een betere darm peristaltiek. Het zorgt ervoor dat het voedsel soepeler en sneller door de darmen vloeit. Aardpeer kan ook de darmen weer sneller herstellen/rustig maken na een verstoring (diarree, ziekte) en werkt ook vocht afdrijvend. 

Belangrijk puntje om hierbij te vermelden: alleen zo vers mogelijke aardperen, tot twee maanden na de oogst, bevatten deze grote gezondheidsvoordelen. De inuline gaat later namelijk splitsen tot korte suikermoleculen door inwerking van het enzym inulase. Dit maakt de aardpeer een stuk zoeter, maar  helaas ook minder heilzaam . Zorg dus dat je in de herfst (de oogsttijd voor aardperen) je slag slaat!

Over inuline in aardpeer

Inuline zelf heeft geen zoete smaak (inuline preparaten bevatten vaak afbraakproducten, zoals fructo-oligosachariden met een zoete smaak, waardoor het preparaat wel vaak zoetig smaakt), inunline heeft een witte kleur en is vrij goed in water oplosbaar. 

Inuline wordt niet door de dunne darm opgenomen, omdat bij de mens het nodige enzym niet aanwezig is om de beta-bindingen af te breken die tussen de verschillende fructose-eenheden zitten. In de dikke darm wordt inuline door bacteriën afgebroken tot verschillende afbraakstoffen die biologisch actief zijn. 

1) Fructose-ketens vormen inuline en fructo-oligosacchariden (inulineketens). Inuline is een onoplosbare zoete stof, die niet in de dunne darm wordt afgebroken en in de dikke darm terechtkomt. Lactobacillus reuteri kan inuline vormen. 

2) Fructo-oligosaccharide (FOS) wordt gebruikt om de darmflora op te bouwen. Het verlaagt de pH en geeft een stijging van Bifidobacterium, Lactobacillus en Bacteroides spp. en E.coli. Het gebruik van een commercieel product Inuline is niet altijd noodzakelijk. Inuline is te vinden in artisjokken, asparagus, prei, ui (3%), arrowroot, zoete aardappelen, knoflook (8%) en vooral in de aardpeer (14%) en de cichoreiwortel (14%). De grote klis, een opmerkelijk heelkruid, bestaat voor 45% uit inuline. Je hebt slechts 1 ons aardperen (of wel 14 gram inuline) per week nodig om een flinke toename te bewerkstelligen. 

3) Inuline remt worminfecties. Bij varkens die inuline kregen toegediend hadden 86% minder wormen in de darm. 

4) FOS en inuline toediening zijn ongunstig bij een infectie met salmonella en overgroei met Enterobacteriaceae. De stoffen stimuleren kolonisatie en translocatie (binnendringen van het slijmvlies) van salmonella. Gelijkertijd toegediend calcium gaat dit negatieve effect tegen.

This study determined nutrients, chemical contaminants, (insecticide residues and heavy metals), and natural toxic substances (nitrate, nitrite, cyanide, oxalate, phytate, and trypsin inhibitor) in tubers of Jerusalem artichokes-Kaentawan in the Thai language-grown in four major provinces in Thailand. They were purchased, prepared, homogenized, and freeze-dried for further analysis using standard methods. All Kaentawan samples contained considerable amounts of fructans and dietary fiber (15.4±0.2gand3.2±0.8g/100gfresh weight [FW], respectively), as well as potassium and iron (339±61and0.32±0.05mg/100gFW, respectively). All samples had very low amounts of insecticide residues (37 compounds), cyanide, and trypsin inhibitor, as well as Pb, Cd, nitrate, and nitrite (0.82±0.09, 0.10±0.02, 1.9-17.5, and 0.01-0.24mgkg-1FW, respectively), in addition to oxalate and phytate (14±9and0.17±0.02mg/100gFW, respectively). Fructose has recently received much attention due to renewed interest in natural sweeteners. In addition, fructose has some advantages to sucrose in sweetness, solubility, viscosity, and dental health characteristics. Fructose is deposited as storage fructans of the inulin (beta-1,2) type in tubers and rhizomes of the Compositae family. The utilization of the Jerusalem artichoke (Helianthus tuberosus) tuber as a source of fructose syrup is discussed. This plant has the potential to produce more sugar per acre than corn or sugar beets. In addition, the artichoke has higher frost resistance and lower heat unit requirements than corn and is somewhat more tolerant to low moisture conditions than sugar beets. A high quality fructose syrup can be produced from artichoke tubers. The extraction step was found to be particularly important since development of adverse colors and flavors must be prevented. The fructans may be acid or enzyme hydrolyzed but the latter method gave a higher quality syrup. Ion-exchange resins and activated charcoal were effective in removing coloring and flavoring materials, and also reduced other noncarbohydrate constituents. Since the enzymatic hydrolysis of the fructans is an attractive alternative to acid hydrolysis, a process was developed for producing and purifying a special beta-fructofuranosidase (inulase) from Saccharomyces fragilis. Inulase has a much higher specificity for fructans than commerically available beta-fructofuranosidase (invertase).

Kenmerken

De aardpeer is nauw verwant aan de zonnebloem, maar in tegenstelling tot de laatste vormt hij knollen die lijken op aardappelen aan de wortels. De ondergrondse scheuten verdikken zich tot bruine, gele of rode, onregelmatig gevormde, gewortelde uitlopers (knollen), waaraan de plant ook de naam "aardpeer" te danken heeft. De twee tot drie meter hoge, met merg gevulde stengel en de tegenoverliggende, hartvormige bladeren hebben ruwe borstelharen. Aardpeer bloeit vanaf september gele bloemen. Met een diameter van vijf tot tien centimeter is de gele bloemkop beduidend kleiner dan die van de zonnebloem. De aardpeer plant zich vegetatief voort uit de knollen. Het belangrijkste ingrediënt in de knol is de fructose inuline.

Cultuurhistorische achtergrond

De Noord-Amerikaanse indianen verbouwden Jeruzalem-artisjokken als voedsel. Topinamboer kwam aan het begin van de 17e eeuw voor het eerst naar Europa als sierplant. Het latere gebruik als voedsel eindigde grotendeels in de 18e eeuw met de opkomst van de aardappel. Sinds die tijd is ook de productie van alcohol uit de knollen bekend. Als voedsel is de artisjokknol van Jeruzalem u.a. interessant voor diabetici, omdat het veel fructose bevat en 7-8% van de koolhydraten inuline is.

Teelt

In Duitsland zijn bij gebrek aan nieuwe rassen alleen oude rassen beschikbaar. Plant-, verzorgings- en oogsttechniek kan worden overgenomen uit de aardappelteelt. In dammenbouw worden vier tot vijf planten per vierkante meter geteeld, waarbij de standplaatseisen lager zijn dan bij de aardappel. Vorsttolerantie (tot -30° C) is bijzonder voordelig, maar aardpeer is moeilijk te bewaren. De knollen worden van november tot maart geoogst met opbrengsten tussen de 30-50 ton verse massa/ha. Cellulose kan ook worden verkregen uit de stengels.

De bovengrondse plantmassa kan ook in de nazomer met een hakselaar worden geoogst bij een DS-gehalte van 25-30%. In de experimentele teelt werden kruidenopbrengsten van ca. 10-20 t droge stof/ha behaald. Omdat de knollen bij gebruik van het kruid in de grond blijven, zullen ze volgend jaar weer uitlopen.

Jeruzalem-artisjokken hebben een enorm groeipotentieel en aangezien fragmenten van wortelstokken voldoende zijn om weer te ontkiemen, kunnen er in de volgende cultuur problemen ontstaan ​​met doorgroeien en kan deze verwilderen.

Jerusalem artichoke (JA) has the potential to attenuate lipid disturbances and insulin resistance (IR), but the underlying mechanisms are not well understood. In the present study, we elucidated the physiological responses and mechanisms of JA intervention with a comprehensive transcriptome analysis. Wistar rats were fed a control diet, a 60 % fructose-enriched diet (FRU), or a FRU with 10 % JA (n 6-7) for 4 weeks. An oral glucose tolerance test was carried out on day 21. Liver samples were collected for biochemical and global gene expression analyses (GeneChip® Rat Genome 230 2.0 Array, Affymetrix). Fructose feeding resulted in IR and hepatic TAG accumulation; dietary JA supplementation significantly improved these changes. Transcriptomic profiling revealed that the expression of malic enzyme 1 (Me1), associated with fatty acid synthesis; decorin (Dcn), related to fibrosis; and cytochrome P450, family 1, subfamily a, polypeptide 2 (Cyp1a2) and nicotinamide phosphoribosyltransferase (Nampt), associated with inflammation, was differentially altered by the FRU, whereas dietary JA supplementation significantly improved the expression of these genes. We established for the first time the molecular mechanisms driving the beneficial effects of JA in the prevention of type 2 diabetes and non-alcoholic fatty liver disease. We propose that 10 % JA supplementation may be beneficial for the prevention of the onset of these diseases.

Jerusalem artichokes have prebiotic effects

Jerusalem artichokes contain plenty of inulin, a type of prebiotic fiber that has been credited with a number of health benefits due to its medicinal properties. Jerusalem artichokes have a gentle effect on blood glucose

With a glycemic value of 50, Jerusalem artichokes are considered a medium GI food. The glycemic index (GI) classifies foods and beverages based on their ability to increase the level of glucose in the blood. Carbohydrates in foods with a high GI rating break down into simple sugars quickly and cause blood glucose levels to rise sharply. This surge is followed by a steep decline in blood glucose levels.
