Ingredients

1 burger patty (seasoned with salt and black pepper)

1 tablespoon butter or coconut oil

2 eggs

2 pinches salt

2 pinches black pepper

2 tablespoon chopped onion

2 tablespoon chopped tomato

¼ cup cheddar ( I used a spicy jalapeno cheddar)

Garnish optional

1 teaspoon sweet relish

Ketchup

Instructions

    • Season the burger patty with salt and black pepper and grill to medium (1-2 minutes per side on a hot grill)
    • Slice into fine pieces and set aside
    • Beat the two eggs with the salt and black pepper
    • Chop finely the onions and tomatoes
    • Shred the cheese
    • In a non-stick pan melt the butter or add oil on high heat
    • Sauté the chopped burger patty in the oil for another minute
    • Pour the egg all over the beef pushing in with the spatula and allowing the runny egg to seep to the edges (see video demo)
    • Once the egg is no longer runny reduce heat to low, cover and cook for 1 minute or until the top is firm
    • Once the top is firm flip the egg add the onions tomato and cheese to the center
    • Fold over and allow the cheese to melt
    • Serve, and garnish with ketchup and sweet relish.

Greedy Tips:

    • Try not to over-cook the beef at the grilling stage1 to 2 minutes per side.
    • It will cook further when its being sauteed
    • But if you like your meat on the medium/rare side then add the eggs and the beef at the same time instead of sautéing the beef first.
