6 hour roasted tomato spread

Ingredients (Printable recipe)

6 lb cherry or grape tomatoes

2 tablespoon salt

½ cup white sugar

3 tablespoons fresh thyme

4 tablespoon minced garlic

½ cup olive oil

Directions

  1. preheat the oven to 250 degrees F

  2. Wash and dry all the tomatoes and place them into a baking dish

  3. slice approximately half of the tomatoes

  4. add salt, sugar, garlic, thyme, and ¼ cup of oil

  5. toss thoroughly and place in the oven for 3 hours

  6. after three hours toss, make sure no tomatoes are sticking to the pan, and return to the oven for another 3 hours

  7. remove from the oven and allow to completely cool

  8. The tomatoes would have reduced in size considerably as their flavors have concentrated

  9. pour the contents into a food processor along with additional ¼ cup olive oil and blend until smooth.

  10. place into a sealable container and store in the refrigerator for up to 2 months.

Greedy Tips:

  • If you plan to use this as a flavor enhancer in soups, stews, and cream sauces I would recommend freezing for extended shelf life. Place the spread in ice trays and freeze, once frozen empty into a freezer bag and store in the freezer up to a year. Use each cube of frozen tomato spread as you would a cube of bouillon to enhance flavor.
