Rhubarb & Custard Oaty Crumble - Vegan & Gluten Free

Are Oats Gluten free? The short answer is YES — non-contaminated, pure oats are gluten-free. They are safe for most people with gluten-intolerance. The problem is usually caused by contamination in factories so read your oats carefully.

For the Crumble

175g/6oz Fine Oatmeal

125g/4oz Demerara Sugar

125g/4oz Porridge Oats

125g/4oz Vegan Butter ( I like Flora)

Filling

6-8 Rhubarb Stalks, cleaned and chopped

4 tablespoons Golden Caster Sugar

Juice of 2 oranges

1/2 tsp ginger

2 tsp water

A carton of Alpro Custard

The How to bit

  1. In a mixing bowl, mix the oats and the oatmeal together with the butter - like you would a normal crumble but not too hard or it might clump.

  2. Add in your sugar and stir

  3. In a pot add your Rhubarb, juice, water, ginger and caster sugar. Bring to the boil and gently simmer to soften the Rhubarb

  4. When soft pour Rhubarb in an ovenproof dish add in the carton of custard - yes you could make your own but why bother !!

  5. Top with the crumble mix

  6. Put in a preheated oven 180°C /350°F and cook until the top is golden about or 40 minutes
