Vegan Chocolate French Fancies with Blueberries
I wanted to make a little cake for bringing to a party that was easy to eat and these little French Fancy Cakes style with Blue Berries did the trick
Vegan Chocolate French Fancy Cakes:
200g self-raising flour
50g cocoa powder
150g granulated sugar
1 tsp baking soda
1/2 tsp salt
240ml oat milk (or any plant-based milk of your choice)
80ml vegetable oil
1 tbsp apple cider vinegar
1 tsp vanilla extract
For the chocolate glaze:
100g vegan dark chocolate, chopped
50ml oat milk
For decoration:
Fresh blueberries
Instructions:
Preheat the oven:
Preheat your oven to 180°C (350°F) and line a square baking pan with parchment paper.
Prepare the batter:
In a large bowl, sift together the self-raising flour and cocoa powder. Add the granulated sugar, baking soda, and salt. Mix well.
Combine wet ingredients:
In a separate bowl, whisk together the almond milk, vegetable oil, apple cider vinegar, and vanilla extract.
Mix wet and dry ingredients:
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Bake the cakes:
Pour the batter into the prepared baking pan and smooth the top. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely.
Cut into small squares
Prepare the chocolate glaze:
In a small saucepan over low heat, melt the chopped dark chocolate with oat milk, stirring constantly until smooth. Remove from heat and let it cool slightly.
Glaze the cakes:
Once the cakes are cool, pour the chocolate glaze over the top, spreading it evenly with a spatula.
Decorate with blueberries:
Place fresh blueberries on top of the chocolate glaze. You can create a pattern or simply scatter them across the cakes.
Chill and serve:
Allow the chocolate glaze to set by chilling the cakes in the refrigerator for at least 1 hour.
