Acai Vegan Breakfast Waffles with Blueberries
WHY DID YOU USE ACAI POWDER IN YOUR VEGAN BREAKFAST WAFFLES?
My Mother has told me a lot about the benefits of Organic Acai Powder before I chose it. Acai is an indigenous berry commonly found in the rainforests of the Amazon. But is now grown in the Uk and Europe. This antioxidant-rich Acai fruit has been heralded for centuries as a healing, immune-stimulating, energy-boosting fruit
Acai berry contains healthy fats like Omegas 3,6 & 9, to support healthy brain function.
They are known an anti-oxidant, with a similar profile to blueberries, making it a free radical buster.
Acai has a complex of 19 amino acids, supporting growth and repair of cells.
The Berries are packed with vitamins, B1, B2, B3, C, E & Vit C.
The powder is minerally rich with potassium, calcium, copper, magnesium & zinc in substantial quantities.
45% of the berry is made up of Dietary fibre.
The berries are supposed to help you fight infection, lower your cholesterol, give you energy and is good for arthritis
There are 0 – 30 times more anthocyanins in a glassful of Acai Berry than in a glass of red wine. Anthocyanins is the phyto-chemical that is named responsible for a healthy heart.
Most people describe the flavor of the Acai berry as being a cross between a rich blackberry or raspberry and a piece of dark chocolate.
If they aren’t a few good reasons to try it in your waffles I don’t know what is!
Vegan waffles can be just as light and tasty as the normal waffles and think how good they are for you !! My teenagers didn't notice the difference and the addition of Acai powder gave them a heavenly taste and a slightly purple look!

Ingredients
200g Self Raising flour
50 g Rolled oats
2 tsp Baking Powder
a pinch of salt
2 tbs of Maple syrup
2 tbs Acai Powder - I got this from Indigo Herbs
2 tbs sunflower oil or melted coconut oil
300 ml Oat milk with 1 tsp apple cider vinegar
2 tsp vanilla
Servings: 5 or 6
Instructions
In a Jug add the oat milk and the vinegar to make oat milk buttermilk essentially ( it will look like it is curdling ! )
Then add the oil, vanilla, and maple syrup to the buttermilk you made.
In a mixing bowl add your flour, oats, baking powder, acai powder, and salt, and make a well in the middle.
Pour your wet ingredients into the mixing bowl slowly and mix the dry ingredients from the side.
Set the mixture to one side to settle and set up your waffle maker
I set mine to high as we like them crispy and I find that vegan waffles take longer to cook than normal waffles
Pour a ladle full of mixture into the waffle maker and close and hold your breath ( or is that just me !)
Serve with Warmed blueberries and Coconut soy yoghurt - delicious
