Coronation No Chicken Wraps
These wraps are a lovely tasty lunch and the filling can be made in advance and kept in the fridge for 3 or 4 days - they are made with Soya Chunks from Holland and Barrett
Ingredients
2 cups of Soya Chunks from Holland and Barrett - you prepare these by soaking them in boiling water for ten minutes to rehydrate
2tsp Mild Curry Powder - or curry of your choice
Pinch of Salt
One finely chopped red onion
2 tb Vegan Mayo - we like Hellman's but Lidl's Squeezable is good too
2 tsp Mango Chutney
Iceberg Lettuce shredded
Finely Chopped Cucumber
4 large Wholemeal Wraps
You can add any veggies you like really - Baby leaf Spinach and rocket would be nice and you could add tomatoes to your wraps
The How to Bit
In a pan add a little oil (of your choice ) the rehydrated chunks, the curry powder, and a pinch of salt.
Cook until slightly crispy and coloured and take out of the pan
In a Bowl add the Pieces, the vegan Mayo, half of the red onion, and the mango chutney and mix. This is the mix you can store in the fridge
Lightly warm the wraps - you can do this in a microwave for 30 seconds to save time and it makes them easier to fold.
Add Coronation Mix and the Lettuce, Cucumber, and rest of the Red onion
Fold the wraps
Pile a small amount of filling (less than you think you need—overfilling a wrap is the kiss of death) in a line, leaving more than half of the tortilla free on the top and a couple of inches free on each side.
Fold in sides, almost enough so they touch, but with an inch or so between them, so some of the filling still peeks out.
Keep those side flaps pulled in while using your thumbs to bring the bottom flap over the sides. Continue pulling the bottom flap taut and use it to wrap over the filling and the side flaps, rolling one or two more times until the whole thing is secured.
