Vegan Porridge with Blueberry and CinnamonÂ
Ingredients:
1 cup rolled oats - we like the Organic ones from Lidl
2 cups oat milk (or any plant-based milk of your choice)
1/2 cup fresh or frozen blueberries
1/2 teaspoon ground cinnamon
1 tablespoon flax seeds
1-2 tablespoons maple syrup or any sweetener of your choice (optional)
Nuts or seeds, coconut shreds for topping (optional)
The How to Bit
In a saucepan, combine the rolled oats and oat milk. Bring the mixture to a boil, then reduce the heat to low.
Stir in the blueberries, ground cinnamon, and flax seeds.
Simmer the mixture on low heat, stirring occasionally, until the oats are cooked and the porridge reaches your desired consistency. This usually takes about 5-7 minutes.
If you prefer a sweeter porridge, you can add maple syrup or any sweetener of your choice. Adjust the sweetness to your liking.
Once the porridge is ready, remove it from the heat and let it sit for a minute to cool slightly.
Pour the porridge into bowls and top with additional blueberries, a sprinkle of cinnamon, and a tablespoon of flax seeds.
If you like, you can also add a handful of nuts or seeds for extra crunch and nutritional value.
Serve the vegan porridge warm and enjoy your wholesome and nutritious breakfast!
