For the Tummy Warming Vegan Casserole
Ingredients
One Diced Onion
Red Pepper cubed
Mushrooms
Courgette chopped
1 Vegetable Stock cubes -from my store cupboard ( I usually get them when there is a deal on)
2 tbsp Tomato Paste
2 tsp Paprika
2 cloves Garlic
One tin of mixed beans - 79c Aldi
Olive Oil - store cupboard
Cornflour
THE HOW TO BIT
In a pan caramelize the onions in a little olive oil and then add the mixed beans, courgette, and garlic.
Stir in the mushrooms and peppers as before
Make-up 1 pint of Vegetable stock, add in the tomato paste, paprika, and cornflour
Place the vegetables, beans, and stock into a slow cooker and cook on low in the slow cooker for 4- 6 hours
Serve with Brown rice or Mash potatoes.
