Vegan Banana Bread

That Vegan Scot - my husband Mark, makes the most amazing Banana Cake and makes it everytime we have left over bananas that are about to go over 

 Ingredients   

  125g/4oz softened Flora Plant butter

  125g/4oz soft brown sugar

   200g/7oz flour

  500g ripe bananas ( peeled and mashed)

  2tbsp of soya yoghurt

  1tsp baking powder

  Walnuts for topping ( optional especially if there is a nut allergy  

 

 How to

1. Preheat the oven to 180 degrees C or 350 degrees F ? Gas mark 6 and line a bread loaf tin .

2. Cream the butter and sugar in a large bowl or mixer until light and fluffy, gradually add the yoghurt

3. Sieve the flour and  baking powder into the mixture and fold in.

4. Stir in the bananas.

5.Top with Walnuts and banana slices

6. Place mixture into the bread tin and bake in the oven for 30-40 minutes until firm and golden.
