Vegan Trifle
I loved Trifle at Christmas in my youth so I was determined to make it as a Vegan and the time I visited Scotland to meet Mark, my now husband, was just before Christmas - I decided to make him a trifle and we ended up engaged so it must have gone down well !!
If you don't know what Trifle it is a Layered Dessert of Jelly with Fruit and sponge, Custard, and Cream. It doesn't have Meat or Peas in it, like Rachel's did in Friends !!

To Make Sponge
I will admit for this I cheat a bit - hey it is Christmas and time is at a premium. So I great a sponge with Betty Croker Cake mix with a can of 7 up - you add the 7up to the cake mix and whisk. Pour the batter into a shallow cake tin and bake for the instructed time or until golden - is it healthy NO!! Is it Vegan yes and lots of other cake mixes are out there if you are worried about Palm Oil.
I let the cake cool a cut it into cubes for the trifle - you end up with a lot so you could freeze some for another time or use them to make mini cakes.
For the rest of the Trifle
Alpro Custard or you can use Bird Powder with Plant Milk
Oatly Whipping Cream ( found in Tescos this year ) before have used Whipped Coconut Cream
A tin of mixed fruit - we used mandarins as I have a pineapple allergy - yes really !!
Grated Dark Vegan Chocolate for topping or Vegan Sprinkles
The How-to bit
Cook your sponge the day before construction you trifle as you want it to be cold
Mix your Jelly Chrystal with 3/4 water required and the Fruit and sponge while it is warm - Poor into your serving dish. Let your Bottom Layer of Jelly, Fruit, and sponge cool.
Add your custard - if making Birds Custard I would also let it cool before adding
Add your Cream Layer
Decorate with grated Chocolate or Vegan Sprinkles
