"Cheezy" Roasted Veg Pasta
This is a quick, easy and tasty Pasta Dish and a great way of getting in more Vegetables
SERVINGS: 2-4 PREPPING TIME: 10 MIN COOKING TIME: 30 MINS
INGREDIENTS
1 ONION - DICED
2 COURGETTES -CUBED
1 RED PEPPER -IN LARGE SLICES
HANDFUL CHERRY TOMATOES - HALVED
4/5 CHESTNUT MUSHROOMS
OLIVE OIL
BABY LEAF SPINACH - 3 BIG HANDFULS
2 HEAPED TSPS NUTRITIONAL YEAST
ONE KNOB OF FLORA SPREAD
GARLIC - DRIED OR 2 CLOVES MINCED
PASTA OF YOUR CHOICE - ABOUT 75G PER PERSON
SALT AND PEPPER TO SEASON
In a roasting tray add all the vegetables you are roasting and some olive oil - coat the vegetables in the oil and season with Garlic, salt, and Pepper - don't add the Spinach yet!!
Place in an Oven at 180 C and cook until Vegetables are cooked through
In a pot of water cook your pasta until al dente or to your taste.
When the vegetables are roasted add the Spinach to wilt, Nutritional Yeast and a bit of Flora and mix to give the cheezy flavour
Drain your pasta and stir through and then serve.
NOTES The Beauty of this dish is you can roast any vegetables you like and cook any
pasta you fancy !!
