Vegan Lemon Buns
I made these for Mark on his first Birthday in Ireland - you see Mark is an incredible Vegan cook but my specialty is Baking and he said he missed Creamed Buns and lemon cake is his favorite - cue these buns which even the none-vegan in the house demolished

Ingredients
70g sugar
1/4 tsp Salt
30g Butter (I used Flora)
325g Plain Flour
130g Milk (I used Oat), warm + extra for glaze
20g Fresh Yeast (or 7g Dried Yeast)
Zest of 2 Lemons
Juice 1/2 lemon + 50-75g icing sugar
The How to Bit

Pre-heat the oven to 75'C for 5 minutes then turn it off - this will be used for proving the dough
In a mixing bowl, combine the flour, sugar, zest, and salt
Add in the butter, yeast, and milk
Bring them together to form a dough and knead for 10-15 minutes until the dough is smooth and springy. The dough should be soft and slightly sticky. If the dough is too wet, add some more flour until it is easier to handle
Lightly oil the mixing bowl and put your dough back in the bowl and cover it with a tea towel
Put the dough in the warm oven and leave for an hour - an hour and a half until the dough had doubled in size
Put the dough onto a lightly floured surface and cut it into 6 equal pieces
8Shape each piece of dough into a ball and then lightly roll it between your hand and the work surface to make it more of a sausage shape
Grease a loaf tin and place the shaped dough into the tin next to each other
Brush some oat milk over the top of the dough
Put a tea towel over the tin and allow it to rise at room temperature until doubled in size
Pre-heat the oven to 175'C
Glaze the buns once more and then bake for 20-30 minutes until the top is a rich golden brown and they are no longer doughy
Allow to cool for a few minutes before removing them from the tin. If they stick on the edge just run a knife along to loosen the buns
Mix together the lemon juice and icing sugar. You want it thick, but pourable icing. If it is too thin it will just run off the buns
Wait for the lemon buns to cool completely before icing split and add Vegan Cream but eat on the day of making.
