This cake is great with Alpro Custard and or Swedish Glace Vanilla Ice Cream
Moist Vegan Apple Cake
Ingredients:
200g (1 1/2 cups) all-purpose flour
100g (1/2 cup) granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
240ml (1 cup) unsweetened applesauce
120ml (1/2 cup) vegetable oil
1 teaspoon vanilla extract
2 medium-sized apples, peeled, cored, and finely chopped
50g (1/2 cup) chopped walnuts (optional)
The How to Bit
Preheat your oven to 180°C (350°F). Grease and flour a cake pan.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
In a separate bowl, combine the applesauce, vegetable oil, and vanilla extract. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Fold in the chopped apples and walnuts (if using) into the batter.
Pour the batter into the prepared cake pan and spread it evenly.
Bake in the preheated oven for 30-40 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Once cooled, you can optionally dust the top with powdered sugar or drizzle with a simple glaze.
