4 Ingredient Vegan Matcha and Dark chocolate Chip Ice-cream
I made this Vegan ice cream back before I went Vegan on my old Blog - I was challenged by a company to come up with a Matcha recipe and this was the resulting post from that day 7 years ago !!
Ingredients:
2 cans (800ml) of full-fat coconut milk (chilled)
1/2 cup maple syrup or agave nectar
2 tablespoons Matcha powder
1/2 cup dark chocolate chips or chopped dark chocolate
Instructions:
In an Ice-cream maker
Place the cans of coconut milk in the refrigerator for at least 24 hours to allow the cream to solidify.
Open the chilled coconut milk cans and scoop out the thick cream into a bowl, leaving the watery part behind. Save the watery part for other recipes or smoothies.
In a blender, combine the coconut cream, maple syrup, and Matcha powder. Blend until smooth and well combined.
Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions.
In the last few minutes of churning, add the dark chocolate chips or chopped dark chocolate.
Once the ice cream reaches a soft-serve consistency, transfer it to a lidded container and freeze for at least 4 hours or until firm.
No Ice-cream Maker
In a blender, combine the coconut cream, maple syrup, and Matcha powder. Blend until smooth and well combined.
Fold in the dark chocolate chips or chopped dark chocolate into the Matcha mixture.
Transfer the mixture into a lidded container suitable for freezing.
Smooth the top with a spatula, cover the container, and place it in the freezer.
Every 30 minutes for the first 2-3 hours, take the container out and stir the ice cream mixture with a fork to break up any ice crystals.
After 2-3 hours, let the ice cream freeze completely, which usually takes about 4-6 hours or overnight.
Once fully frozen, scoop and enjoy your homemade no-churn vegan Matcha and Dark Chocolate Ice Cream!
This method may take a bit longer than using an ice cream maker, but it's a simple way to achieve a creamy texture without any special equipment.
