Apple Squares
From our friend Mary Lou!
Crust:
2 to 3 c. flour
½ t. salt
2 egg yolks
1 t. lemon juice
½ c. cold water
Filling:
8+ apples, sliced thin
Coat with mixture of:
¾ c. sugar
½ t. salt
2 T. flour
½ t. cinnamon
½ t. nutmeg
Combine dry ingredients, cut in shortening. Combine egg yolks, lemon juice and water and add to flour mixture. Dough will be moist. Divide in two. Roll on floured board and line a 10x15 pan on bottom and sides (using half). Put in filling and cover with other half of rolled crust. Bake at 350°F for 1 hour.
While warm, ice with:
1 c. powdered sugar
1 T. milk
1 T. lemon juice
