Nellie's Farm Recipes
This will be a list of favorite recipes sampled along the Tour (named in honor of Mike's great-grandmother Nellie (Duff) Kelly...)
1. "Missouri Mule Feed" - Tour favorite farm-made granola
Ingredients:
4 c cereal grains (rolled oats)
1/2 c seeds (sunflower, flax)
1/4 c oat flour
1/2 c honey (or maple syrup, rice syrup, sorghum) w/ 1/2 c brown sugar + 2 tsp water
1/4 c canola oil
1 tsp vanilla
3/4 c raisins (or other dried fruit)
1/2 c walnuts (or pecans, hazelnuts)
1/2 tsp Celtic sea salt
Directions:
Mix ingredients (except fruit) and bake at 300 deg F for 30 min (stirring every 10 min). Cool & add dried fruit.
2. Finnish Nissua - a traditional holiday sweetbread
Ingredients:
2 c milk
1/2 c butter
1 c white sugar
1 tsp Celtic sea salt
2 pkgs dry yeast
1/2 c warm water
3 eggs
2+ tsp ground cardamon
2 1/2 c bread flour + 5 1/2 c bread flour (added in 1/2 c increments)
2 Tblsp butter, soft
1 c confectioner's sugar
1/2 tsp vanilla extract
2 tsp milk
Directions:
Beat milk in small pan until it bubbles - then remove from heat. Stir in butter, sugar & salt until melted. Let cool. In small bowl, dissolve yeast in water - let stand until creamy (~ 10 min)
Pour in milk mix into large bowl. Beat in eggs, water, flour, cardamon, & yeast mix. Cover & let stand 20-30 min.
Stir in remaining flour (1/2 c at a time). Beat well with each addition. When the dough has pulled together, turn onto floured surface & knead until smooth (~8 min). Lightly oil a large bowl, place dough in bowl, and coat w/ oil. Cover with a damp cloth and let rise (~1 hr).
Deflate the dough & turn onto floured surface. Divide into 3 parts - then again into 3 braids. Braid 3x3. Place on lightly greased cookie sheet & let rise 40 min (or until doubled) - meanwhile preheat oven to 350 deg F.
Bake in preheated oven for 30 min, until golden brown. Move to wire rack to cool.
In small bowl, mix butter & confectioner's sugar. Stir in vanilla & 2 tsp milk to make frosting. Spread frosting over cooled bread.
