Diabetic Brownies

  • 2 eggs
  • 1 15.5 ounce can of black beans, rinsed
  • 1 1/4 cup sugar-free chocolate chips
  • 1/3 cup vegetable oil
  • 1/4 tsp. cinnamon
  • 2 tsp. vanilla extract
  • 1/4 tsp. salt
  • 1/2 tsp. instant coffee
  • 1 tbsp. powdered stevia
  • 1/2 tsp. baking powder
  1. Preheat oven 350'
  2. Line an 8x8 pan with tin foil
  3. Spray with nonstick cooking spray
  4. In a food processor, combine beans and vegetable oil until smooth
  5. In a large bowl, mix all ingredients
  6. Pour mixture in the pan, evening out the batter
  7. Bake 30-35 minutes
  8. Cool for 10 minutes and then cut


These black bean brownies have about 12g of carbs per serving and 4g of protein! The fiber from the beans digest slower causing a gradual increase in blood sugar levels. Even if you're not Diabetic, you can still enjoy these tasty treats!

Peach & Blueberry Cobbler

  • Half a box of yellow cake mix
  • 2 to 3 ripe peaches, diced
  • 1 cup of blueberries
  • 1 stick of non-salted butter

Extras for topping:

  • Powder sugar
  • Cinnamon
  • Blueberries
  • Butter pecan ice cream
  1. Coat cast iron skillet or pan with butter
  2. Add diced peaches and blueberries in the pan
  3. Sprinkle cake mix on top
  4. Cut butter on top of mix
  5. Put in the oven at 350' for 20 minutes or until brown
  6. Let cool for 15 minutes and sprinkle toppings on if you wish


The contrast of the hot cobbler with the cool ice cream is a dessert you deserve!

Strawberry Brownie Pie

Brownie Base:

  • 1 stick unsalted butter
  • 2 eggs
  • 3/4 cup cocoa powder
  • 1 1/3 cup of sugar
  • 1/4 cup flour
  • 1 tsp vanilla
  • pinch of salt

Toppings:

  • 1 cup of Greek yogurt
  • 1/2 cup powdered sugar
  • Sliced strawberries
  • Melted dark chocolate for drizzle
  1. Set oven to 325'
  2. Melt butter then mix in sugar and cocoa powder
  3. Add one egg and whip
  4. Add the vanilla, salt, and second egg next
  5. Once mixed, slowly stir in flour
  6. Line a circle pan with tin foil and spray with PAM
  7. Pour brownie mix into the pan and cook for 20 minutes (or until a toothpick comes out clean when put in the center of the brownie)
  8. Let cool, then put in the freezer for 15 minutes

Toppings

  1. Mix Greek yogurt and powder sugar
  2. Add this onto the frozen brownie
  3. Add strawberries and dark chocolate
  4. Freeze for another 15 minutes or until ready to serve


I like this dessert served cold because it taste like a brownie ice cream cake! Hope you enjoy!!

Oreo Balls

  • 1 block of cream cheese
  • 1/2 package of Oreos
  • 1/2 package of white, bark chocolate
  • Sprinkles (for fun!)
  1. Crush Oreos into a small round bowl
  2. Add the block of cream cheese
  3. Mix until all you have a consistent ball of Oreo/cream cheese
  4. Roll into bite size balls and place on a baking sheet
  5. Place in the fridge for 15 minutes to harden
  6. Microwave the white, bark chocolate for 2-3 minutes, or until melted
  7. Take the Oreo balls out of the fridge and use a spoon to dip the balls in the white chocolate
  8. Place back on the tray and cover with sprinkles before the chocolate hardens
  9. Place back in the fridge for 5 minutes or so to harden the white chocolate


This is my go to dessert or potluck recipe. It is simple, fast, and cheap to make. As long as you don't mind getting your hands messy!!
