Country-Style Sweet Potato Greens

Simultaneously sweet and spicy, this healthful sweet potato greens recipe bursting with flavor not often associated with eating your greens. This quick and easy side will make you ask for more.

To start preparing this tasty side, you'll need to gather one large bunch of sweet potato greens, a small white onion, canola oil, maple syrup, salt, pepper, and chili flakes.

However, this recipe is very flexible, so don't worry if you're missing some ingredients.

If you're having trouble finding sweet potato leaves, check out the vendors at the Urban Harvest Farmers Market. Still no luck? Out of season? A bunch of large-leafed spinach should be available at most grocery stores and is a perfect substitute.

If maple syrup isn't available, or if it just isn't your thing, add equal parts honey or one tablespoon of sugar in its place.

To start preparing, remove the thick stems from sweet potato leaves. The smaller stems are tender and can be eaten, but larger stems are tough and not very tasty. Discard the larger stems.

Then chop half of the onion into small pieces.


Next, heat 2 teaspoons of canola oil in a medium-sized pan over medium heat. Once hot, add the onions and sauté them until they are just soft and see-through, which should take 3-5 minutes. If you want to prevent the onions from turning brown while they cook, add a small pinch of salt to the pan and stir it in. The salt should draw water out of the onions which will prevent them from browning before they cook.

Once the onions are clear, add the leaves, a tablespoon and a half of maple syrup, between half and one teaspoon of red pepper flakes (depending on your preference for spice), and sauté until tender, about 5 minutes.

Once leaves are wilted, serve quickly and eat warm. Enjoy!
