Hibiscus Flower Sweet Potato Tacos

Feeling a bit drowsy lately? In need of some energy? Then this is the recipe for you! Packed with vitamin C and more, this nutritious meal brings a taste of Latin culture with a twist to your table. Whip up this fun meal when in need of something tasty and healthy.

Directions


  1. Preheat the oven to 400F.

  2. Diced sweet potatoes into small cubes (dime-sized) and season with cinnamon, turmeric, or any special season of your liking

  3. Oil a metal pan and then place the sweet potato cubes on them (you can also use parchment paper instead of oil if you want)


Optional

While you wait for the oven to preheat to 400F, boil the hibiscus flowers/leaves:

    1. In this recipe, I used dried hibiscus flowers/leaves (via Amazon)

    2. Pour 2 cups of water into a medium-sized pot and allow it to boil for a couple of minutes

    3. Add the dried hibiscus flowers once boiling and leave in until they soften (~10 minutes)

    4. Once the water changes color, separate the hibiscus from the water, allow it to cool (this will take a long time, so to speed up the cooling process place the softened hibiscus flowers in a pot of cool water)

    5. Once cooled, cut into tiny pieces and place in a bowl to leave on the side for now

The oven should have preheated by now: so place the tray with the seasoned sweet potato in the oven and leave to bake for 30 mins (check occasionally and poke with fork before taking out)

  1. Now let’s go finish chopping and dicing the other ingredients for these yummy tacos

    1. Cut the pineapple into small cubes (quarter-sized) or open a can of pineapple chunks and separate from juice (save the juice for later as a tasty side drink) → place the cubes/chunks into a different bowl to put on the side

    2. Cut the onions into small chunks and place in a different bowl on the side

    3. Dice the tomatoes into small chunks and place in a different bowl on the side


  1. Place a medium-sized pan on the stovetop on medium heat and put 2 tsp of olive oil

  2. Add the onions and fry until they crystalize uncovered (occasionally stir them so they do not burn, but if you do like a little crunch in your meals like I do, then let them sit for a bit)

  3. Add pineapples chunks into the same pan and let it cook for 10-15 mins uncovered on medium heat (stir occasionally)

  4. Add the chopped hibiscus flower to the pan and slowly incorporate salt and pepper to your liking (add turmeric here if you would like as well, just not too much since we already seasoned the sweet potato cubes with it)

  5. Add the tomatoes and allow the entire mix to sit covered for 2-5 mins

To Serve



  1. Now heat up a smaller pan with 1 tsp of olive oil on a different stovetop with semi-high heat and place a corn tortilla to cook for 2 mins on each side (or place a few at a time on another oiled sheet pan and allow to bake in the oven at the same 400F for 5 mins)

  2. Cut the avocado into 6 slices after removing the seed and place on flat plate Chop the cilantro into small pieces and place in different bowl on the side

  3. Take out the sweet potatoes (make sure poked with fork or toothpick and go through smoothly)

  4. Remove pineapple hibiscus mix from stove top

  5. Get a tortilla and place the pineapple mix first, next the sweet potatoes, then sprinkle some of the chopped cilantro, and lastly place an avocado slice on top of the taco

  • Repeat this as many times until the pineapple hibiscus mix is gone

  1. Voilà! Time to Eat! You now have a serving size of 2-6 tacos that you and a pal can enjoy! Oh and don’t forget your tasty pineapple drink you saved earlier on the side :)

***Notes About the Ingredients***

~ This recipe can still be done without the hibiscus flowers or the corn tortillas (For instance the tortillas can be substituted with leaf lettuce)

~ The citrus type (e.g. use oranges instead of pineapples) can change, honestly I believe almost any fruit can work in this recipe

~ Also any seasoning can be used to your liking, especially depending on such preferences like sweetness or savoriness→ experiment and have fun!
