Peter the Pieman & Son

My name is Ckarissa, and you'll always find me cooking in my kitchen here in County Galway, beside the shores of Lough Derg, while Peter, my husband, and my son, Oscar, are at the markets selling our pies.

Our pie kitchen was set up fifteen years ago and you could have come across us at many of Ireland's farmers' markets over the years. Nowadays, you'll see us every week at Ennis, Kilkenny and, of course, Tullamore.

I'm very proud of the pastry I make daily for all the pies, using Irish butter and flour. The fillings range from steak (local Irish beef), chicken (free-range Irish) and ham, and our most popular is the duck pie, made with confit of duck, topped with rösti potatoes and cheddar cheese. Don't think we neglect vegetarians, though! Our vegetable pie is made with fresh vegetables, herbs and lentils, topped, again, with röstis and cheese.

When Peter and Oscar are at the markets, they enjoy meeting the customers and having a chat, and they come home full of stories. Ours is a family business and I can honestly say that everything is made from scratch and cooked with love.
