WHEN-ESOTA's Italian Chili

Some people call this Pasta Fagioli soup (think Olive garden) but this is a little different. To me, its Italian Chili. It took Third place in my school chili cookoff a few years back…so there’s that! As I was eating this today I was wondering how this would taste over an Italian sausage link, ie an Italian Chili dog?

½ lb ground beef

½ lb of mild Italian Sausage (morellis)

1 small onion diced (1cup)

1 large carrot julienned or finely chopped (1cup)

3 stalks celery chopped (1 cup)

3 cloves garlic, minced

2-14.5 oz cans diced tomatoes

1-15 oz can red kidney beans (with liquid)

1-15 oz can great northern beans (with liquid)

1-15 oz can tomato sauce

1-12 oz can v-8 juice

1-TBSP white vinegar

1½ tsp salt

1 tsp oregano

1 tsp basil (If I have fresh leaves I use those if not dried will do)

½ tsp pepper

½ tsp thyme

½ pound (1/2 pkg.) ditali pasta (From Buon Giorno)

Brown the beef and Italian Sausage. Add all vegetables and saute for 10 minutes. Add everything else but pasta and Simmer for 50 minutes, then add in pasta for another 10 minutes or until pasta done. Serve with Parmesan cheese on top (grated or shredded) and a side of breadsticks (Morellis)
