Weight Watchers Turkey Meatloaf

Makes 8 servings

  • 1 lb ground turkey
  • 1-1/2 cups onions, chopped
  • 1 Tbs garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1-1/2 tsp A1 sauce
  • 1 Tbs dried parsley
  • 1/4 cup ketchup
  • 1 cup quick oats (not instant)
  • 1/2 cup plain yogurt
  • 1 Tbs egg white

Preheat oven to 400°F.

In a non-stick skillet, cook onion and garlic over moderate heat.

Stir continuously until onion is softened (about 2 minutes).

Place onion and garlic in mixing bowl with salt, pepper, Worcestershire sauce, parsley and ketchup.

Mix well.
Stir in oats, yogurt and egg white.

Let stand 5 minutes.

Add turkey and mix well with your hands.

Place turkey mixture in a standard bread pan that has been sprayed with a non-stick spray.

Bake 50 to 55 minutes (until meat thermometer inserted into meatloaf registers 170°F).

Let stand 5 minutes before serving.

Cut into 8 slices.
