Pumpkin Protein Cake

Makes 2 servings.

  • 1 cup pumpkin puree
  • 1 egg
  • 1 scoop vanilla protein powder
  • 1 Tbs chia seeds
  • 2 Tbs almond milk
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1/2 tsp baking powder
  1. Mix all the ingredients together and place in a shallow microwaves-safe dish that has been lightly coated with a non-stick spray.
  2. Cook on HIGH for 2 minutes. Then cook on HIGH 1 minute more.
  3. Remove from the mike and let rest 5 minutes.
  4. Divide between 2 bowls and top as desired.
