Makes 5 servings of 2 cakes per serving

  • 1 cup white flour
  • ¼ cup brown sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • ½ tsp ginger
  • ¼ tsp nutmeg
  • 1 cup fat free milk
  • 1 egg
  • 1 Tbs canola oil
  • 1/3 cup pureed cooked pumpkin
