Kim's Ginger Crack Cookies

3/4 cup canola or vegetable oil
1/4 cup molasses
1 large egg
1 cup sugar
2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ginger
1/2 tsp cloves
1/4 tsp salt
2 cups all purpose flour
2 Tbs sugar for rolling

1. Mix oil, molasses, egg and sugar together until well blended. Add other ingredients and mix well.

2. Chill dough for at least one hour.

3. Roll into 1” balls and roll each ball in sugar.

4. Bake on ungreased cookie sheet for ten minutes at 350.
