Gingerbread and Pumpkin Overnight Oats

Makes 1 serving

  • 1/3 cup rolled oats
  • 1/4 cup pure pumpkin
  • 1 Tbs ground flax seed
  • 1/2 tsp cinnamon
  • dashes of ginger and nutmeg
  • 2/3 cup unsweetened vanilla Almond Breeze
  • 1/3 cup fat free vanilla yogurt
  • 1 heaping tsp blackstrap molasses
  • 1 tsp vanilla
  • 1 packet Splenda
  1. Mix all ingredients together in medium bowl, cover and leave in the refrigerator for several hours or overnight.
