Avocado and Egg Salad

Makes 2 servings


Ingredients:

  • 2 to 3 cups salad greens, washed and dried
  • 10 grape tomatoes cut in half
  • 3 or 4 thin slices of red onion
  • 1/2 cup fresh parsley, chopped
  • 1 mini cucumber, cut into slices
  • 2 hard boiled eggs, peeled and slices
  • 1 large avocado, washed, peeled and cut into chunks
  • Salt and pepper

For the dressing:

  • 2 tsp olive oil
  • 1/1/2 Tbs apple cider vinegar
  • splash of lemon juice

Directions:

  1. Place the salad greens in 2 serving bowls and set aside
  2. Put the tomatoes, red onions, parsley, cucumber, eggs, and avocado in a medium mixing bowl.
  3. Mix the dressing ingredients together in a small bowl and pour over the eggs, etc in the mixing bowl.
  4. Toss gently.
  5. Spoon the mixture over salad greens and serve with salt a pepper to season.
