Almond Butter Cookie Bars

Makes 24 servings 

  • 1/4 cup butter, melted
  • 1/4 cup unsweetened applesauce
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 egg
  • 1/3 cup almond butter
  • 1/2 tsp vanilla
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup quick oats
  • 1/4 cup chocolate chips
  1. Stir together applesauce, melted butter, and sugars until thoroughly combined.
  2. Add egg and mix well.
  3. Stir in almond butter and vanilla and mix till smooth.
  4. Add flours, baking powder, and salt; stir to combine.
  5. Stir in oats and mix well.
  6. Press mixture into a 9×13 pan that has been coated with a non-stick spray.
  7. Bake at 350° F for 10 minutes.
  8. Remove from oven and sprinkle chocolate chips evenly over the top.
  9. Return to oven till golden brown and baked through, about 8-10 more minutes.
  10. Cool completely before cutting into 24 squares.
