How I Found MOPS:


Deciding to be a stay at home mom was a no brainer for me. But when it actually came to leaving the workforce, I felt as if I was in a minority. Joining MOPs showed me that I was not alone in being a stay at home mom. Yes some moms work outside the home, but just as many are home with their kids. MOPs connected me to other moms like myself at a time I needed it most. I was able to be myself and know that no matter what I was dealing with, someone there could understand or at least offer support. MOPS is filled with wonderful women and mothers. And I feel I have made life long friends.

Recipes by Moms:

Lemon Bar recipe made by Anna G.
Ingredients:
Crust
1 cup (2 sticks) unsalted butter, room temperature
2/3 cup powdered sugar
2 1/4 cups all purpose flour

Filling
2 cups sugar
4 large eggs
7 tablespoons fresh lemon juice with pulp
1/4 cup finely grated lemon peel (from about 6 large lemons)*
1 teaspoon baking powder

Additional powdered sugar

*I only used the zest from the 2 lemons it took to make 7 Tbsp of juice.

Directions:
1) Preheat oven to 350°F.
2) Using electric mixer, beat butter in large bowl until fluffy. Beat in 2/3 cup powdered sugar. Add 2 cups all purpose flour, 1 cup at a time, beating until moist clumps form.
3) Using back of fork, press dough over bottom of nonstick 13x9x2-inch metal baking pan.
4) Bake crust until light golden, about 20 minutes.
5) Meanwhile, beat 2 cups sugar and eggs in medium bowl until blended. Beat in fresh lemon juice with pulp, lemon peel, and baking powder, then remaining 1/4 cup all purpose flour for filling.
6) Pour lemon filling over hot crust.
7) Bake until filling is set in center and begins to brown on top, about 20 minutes.
8) Transfer pan to rack and cool completely.
 DO AHEAD: Can be made 1 day ahead. Cover and refrigerate.
