Chocolate Ganache

1/2 C whipping cream

1 TB butter

1 TB sugar

1 C bittersweet chocolate pieces

Combine first three ingredients in heavy saucepan. Bring just to boiling, stirring to dissolve sugar. Remove from heat. Place chocolate pieces in medium mixing bowl. Pour hot cream over chocolate and let stand 5 minutes. Stir until smooth. Cool to room temp before using. Makes 1-1/4 C.
