Chocolate Chunk Walnut Oatmeal Cookies (


6 TB unsalted butter

3/4 C packed light brown sugar

1/3 C all-purpose flour

1/3 C whole-wheat flour

3/4 t baking soda

1-1/2 C old-fashioned oats

1/2 t salt

1 egg (lightly beaten)

1 t vanilla

1/2 C chopped walnuts

3 oz bittersweet chocolate, coarsely chopped (I used 70%)


Preheat oven to 350. Melt butter in small saucepan over low heat. Remove from heat and add the brown sugar; stir until smooth. Combine the flours, baking soda, oats, and salt in medium bowl. Combine butter mixture with the dry ingredients, add the egg, and the vanilla. Fold in the walnuts and chocolate. Mix well, and spoon by tablespoons onto lightly greased baking sheets. Bake for 12 minutes or until tops are dry to the touch.

Makes about 32 cookies.
