08/24 - Feliz

When I was doing our research on moving to Lake Chapala I used to ask folks, who already lived here, what did they do everyday.  And everyone told me that you could do almost anything that makes you happy because there are plenty of things you can do and activities that you could join.  For me it was pretty easy, water volleyball, walks by the lake, photography, parades & fiestas you name it and I could do it here.

Although it was easy for me, and most men, I was a bit concerned whether Kimmy would find things that she really enjoyed and have as good of a time as I did.  

Well, I want you to know that this is not a problem and my wife's life is as enjoyable for her as mine is for me.

She has made a lot of girlfriends and has developed some close friendships.  She gets together with several of them on a weekly basis just to have coffee or breakfast and she's got 2 groups that play Mexican train once a month, plus she subs for Bunco.
And now she's having the time of her life taking cooking lessons.

She spotted an ad for cooking lessons and since Esther and her are both great cooks they both thought it would be a good idea. They got signed up and went to one set of classes where the chef showed them how to make various meals and they both really enjoyed it.  They got to watch how to prepare various meals, had wine while they watched and then got to enjoy the meal.

Then she saw an ad for a different cooking class.

This one was being conducted at the Hacienda del Lago by Chef Alex.  So the girls signed up for the class and they loved it.

This class was more of a hands on class where they actually helped prepare the meal and that's the part they love.  The focus was on Latin American cuisine and each week they got to prepare a different meal from a different country.

They prepared a three course meal each week to include soup, entree and desert.

Like the other cooking class they attended, they had a wine pairing with the meal and they all got to enjoy the fruits of their labor once the meal was prepared.

Kimmy and Esther both would come home after class just raving about what they learned and how much they enjoyed it.  And they couldn't say enough good things about Chef Alex and the staff that helped them prepare each course.

Like the old saying "A happy wife means a happy life", I was really glad that she had found something that she loved to do.

And the best part of the story is that now that Esther and Kimmy have learned how to prepare these wonderful meals, they thought it would be a good idea to share it with Leo and me.  

The girls will get together and one of our houses and spend all day in the kitchen and prepare the same meal that they learned how to cook at cooking class. And let me tell you Leo and I are very happy that they are both good students.

Invite some good friends over, crack open a bottle of wine and enjoy a fine meal with friends. What more can you ask for?
