Sauerkraut with bacon and apple

This is a wonderful combination of spicy (chilli), sour (sauerkraut) and sweet (apple, sultanas); and crunchy (sauerkraut, bacon) and creamy (mashed potato). Easy to prepare and sooo yummy when you have it with your own homemade sauerkraut :-)
Ingredients
4 slices of bacon, in 1 x1 cm pieces
1 onion, coarsely chopped
1 apple, in 1 cm cubes (unpeeled)
A hand full of sultanas
1 tsp cumin
1/2 tsp chilli powder (or more)
Water
350 g homemade sauerkraut
Vegetable oil for frying
Preparation
Heat some oil in a large frying pan and fry the bacon until crispy. Take the bacon out and add the onion to the pan. Fry the onions for a few minutes. Add apple, sultanas, cumin, chilli and a splash of water and simmer, with lid on, until the apple starts to soften, stirring occasionally. Stir in the sauerkraut and bacon and just quickly heat it up; if you simmer it for too long, the flavour of the sauerkraut will be less strong, it loses its crispiness and you will kill all the good bacteria (probiotics).
Serve next to your favourite mashed potato. I like it with (dairy free) butter, milk, onions, chives, garlic, mayonnaise, salt and pepper.
