Roasted plums with thyme

In February and March, I went out to pick plums, LOTS of plums! I came home with approximately 17kg! That's when you have to get creative. I didn't want to go for the usual; plum -jam, -sauce, -chutney... I came across this recipe and decided to give it a go, even though it sounds a bit strange! Turned out really well, so have a try, next time you have plums.

Ingredients

  • 4 to 6 ripe plums, cut in half and pitted

  • olive oil

  • pinch of salt

  • 2 tbsp castor sugar

  • 1 tsp fresh thyme leaves

Preparation

Place a rack in the upper third of the oven and preheat oven to 200 degrees C.

Lightly grease a baking tray and place halved plums, with the cut side up. Drizzle with olive oil, sprinkle

with salt, sugar, and thyme leaves. Roast for 12 to 15 minutes, or until the plums are cooked through and beginning to bubble. Remove from the oven and allow to cool to warm or room temperature.

I just like them by itself, but you can also serve them with yoghurt and toasted muesli for example.

Plums will last in an airtight container in the refrigerator for up to three days. They can be reheated or served cold.
