Turmeric and onion mashed potatoes

I was brought up on good Kiwi food and one of my favourite dishes was creamy mashed potatoes. However, my family enjoys more spicy flavours so I have adapted the recipe for them - I really enjoy it too!

This is a good winter dish and very easy to make.

Ingredients

  • Creamy mashed potatoes (I add butter, and milk or yoghurt to taste to the potatoes)

  • Olive oil or other oil for frying

  • Onions to taste (I like lots of them)

  • 1 tsp turmeric for a medium pot of mashed potatoes

  • Chilli powder to taste

  • Salt and pepper to taste

  • Grated cheese

Preparation

Fry onions in oil until translucent and golden brown.

Add the turmeric and chilli powder and fry for a minute or two longer. Add the onion-turmeri-chilli-powder fry to the mashed potato and mix well. Check for salt.

Put the mashed potato into a baking dish, sprinkle with cheese and bake at 170 degrees C until the cheese is a golden brown.
