Kofta balls from runner beans

A basic kofta recipe given to me by a Hare Krishna friend.

Ingredients for the kofta balls

  • Runner beans (or other veggies: brassicas like cauliflower work really well, can use cabbage ok but not other leafy greens like silver beet which is too watery)

  • 1 onion

  • 1 tsp turmeric

  • 1 tsp salt

  • 1/2 - 1 cup chickpea flour

Ingredients for the sauce

  • 1 can tomatoes

  • 1/2 tsp cumin

  • 1/2 tsp coriander

  • 1/4 tsp ginger

  • 1/2 - 1 tsp salt

  • 2 small bay leafs

  • 1/2 tsp oregano

  • 1 tbsp soy sauce

  • 1/3 cup sugar

Ingredients for the other sauce (which the kids like)

  • 1 can tomatoes

  • 2 tsp basil pesto

Preparation foe the kofta balls

Puree the vegetables with the spices. Add enough chickpea flour to make balls that hold together. Shallow fry in oil. Serve warm on their own or with sauce.

Preparation for the sauce

Combine all ingredients in a pot and heat up. Serve over balls.
