Courgette and Cheese Muffins

This recipe has helped me to cope when courgettes keep coming at a rate faster than I can manage to use in dinners or give away. These freeze well and are very popular with my husband.

Ingredients

  • 2 cups flour

  • 1 tbsp baking powder

  • ½ tsp salt

  • 2 tbsp sugar

  • 2 tbsp chopped onion

  • 3 slices bacon, fried and crumbled

  • or tbsp. whole grain mustard

  • ½ cup grated tasty cheese

  • ¾ cup grated courgette ( 1 x 18cm courgette)

  • 1 egg, well beaten

  • ¾ cup milk

  • ¼ cup oil

Preparation

Preheat oven to 200 C.

Stir together flour, baking powder, salt, sugar, onion, bacon, cheese and courgette. Mix egg, milk and oil together well. Add this mixture to dry ingredients. Stir until just moistened.

Fill greased or paper-lined muffin pans 2/3 full.

Bake for 20 minutes, or until golden brown. Makes 12 muffins.
