Cabbage soup with pork

When you have a lot of cabbage (from the Garden of course), you start to think about what else you can make with it, apart from coleslaw. I figured soup would be a good way to have lots of cabbage in a single dish. The marinaded pork adds a lot of flavour to this easy soup.

Ingredients

Marinade Ingredients

  • 300 g pork in small strips

  • 3 cm fresh ginger root, finely chopped

  • 4 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 red chili pepper, finely chopped

  • 3 cloves garlic, finely chopped

Soup Ingredients

  • 3 tbsp sunflower oil

  • 1 Chinese or white cabbage, in strips

  • 1 yellow capsicum, in strips

  • 1,5 L water

  • 3 chicken stock cubes

  • 1 bunch spring onion/chives in rings

  • 300 g white rice

Preparation

Mix meat with ginger, soy sauce, sesame oil, chili pepper and garlic, leave to marinade for at least 30 minutes, but preferably a few hours.

Prepare the rice according to the instructions on the package.

Stir-fry the meat in olive oil in a large pot until it starts to brown. Add the cabbage and capsicum and leave to fry for a few minutes, until the cabbage becomes soft. Add 1,5 L water and stock cubes and bring to the boil. Serve immediately with spring onion (or chives) and rice.
