Huli-licious

Posted on August 18, 2012 -- Sandie Ward ― www.thefoodstalker.com

“What do a yellow food truck, an outdoor cooking rotisserie and guy named Warren and “Beansy” all have in common? Mike Fuse. He’s the culinary creator of Mikes Huli Huli Chicken and a drive up the coast from the hustle and bustle of Honolulu lead me right to his door. My nose followed the scent from miles away and a marching band of spices make this the tastiest chicken on the island. Broiled over Kiawe wood and naturally flavored with traditional Hawaiian sea salt, the wood gives the chicken it’s scrumptious smoked flavor. And the Kalua pork, don’t even get me started or I may just hop a plane and make it back in time for lunch. Trust me, even you would go for seconds!  Chef Warren wasn’t about to divulge his secret ingredients, but have no fear, The Food Stalker was able to uncover a few tips. Next time you visit the island, hop in that convertible hungry, take that fork in the road and head up the Huli Huli trail to Mike’s.  Tell him The Food Stalker sent you. Hot wired for flavor, you’ll be glad you did. Mahalo!”

“Hawaiian Roadside Dining at its Best - Try the Kalua Pig!”

If you've never tried a meal from a roadside food truck before, Mike's Huli Huli Chicken is the place to do it. Watch for chickens broiling over Kiawe wood, smoke rising into the air. You may even smell the aroma before you see the truck! It happened to be lunchtime as we were driving up the Kamehameha highway, and this was the perfect stop. As amazing as the chicken smelled, it wasn't quite ready so we opted for the Kalua Pig instead. Served in a take out container with two scoops of white rice, fresh pineapple, tomatoes, and a lettuce salad, it was easily one of the best meals of our visit to Oahu, and was under $10.

There is a handful of picnic tables at which you can dine, with a nice view of the water and mountains.
