Zeekraal is een pioniersplant en als geen andere plant bestand tegen zoute omstandigheden. De plant neemt het zout op tijdens de groei en heeft daardoor een zilte smaak. Het eerste deel van de wetenschappelijke naam, Salicornia, is een combinatiewoord uit het Latijn, want sal of salis is 'zout' en cornu is 'hoorn'. Dat laatste probeert de vorm van de geledingen te duiden. Tijdens het begin van de industriële revolutie was er in Engeland een enorme vraag naar zeekraal omdat voor de fabricage van glas en zeep soda nodig was. Zeekraal werd in grote hoeveelheden geoogst en op het strand verbrand. De overblijvende as bevatte hoge concentraties aan dat natriumcarbonaat. Was en droog de zeekraal. Maak de vinaigrette: per de halve citroen uit, meng met de olie, sojasaus, peper en gember. Verdeel de salade van zeekraal, de shiitakes en de garnalenstaarten over 4 kommetjes of glazen. Bestrooi met sesamzaad en giet er voor het opdienen de vinaigrette overheen.
