Choclolate Chip Cookie and Banana Bread Recipes

Chocolate chip cookies

Preheat oven to 400 F

Soften 1 pack (2 cups) butter in micro for 1 min.

Cream (mix with a spatula) with 3 cups brown sugar.

Add 5 eggs and 2 tsp vanilla (fake is fine)

In another bowl, combine 3.5 cups of whole wheat flour with 2 tsp salt and 2 tsp baking soda, then add to the butter mixture.

Blend 4-6 cups of 3 min oats and add to the mixture along with 2-3 cups of dark chocolate chips .

Spoon by the tablespoonful onto a greased or non-stick cookie sheet

Turn oven down to 375.F

Bake for 8-11 minute (depending on size)

(I usually heat the oven to 375 before putting each tray in and then turn it down to 360 while they cook)

Recipe can be halved.

Chocolate Chip Banana bread or muffins

Preheat oven to 375 F

In a blender mix 2-3 cups ripe bananas (can be peeled and frozen and defrosted)

2/3-1 cup oil 2-4 eggs, 2 tsp vanilla and 1-1.5 cup of brown sugar.

In another bowl combine 2.5-4 cups whole wheat flour 2 tsp baking soda and 2 tsp baking powder (optional). Add this to the wet mixture. (you may need to add a bit more flour if too goopy. May also add ¼ to 1/2 cup yogurt)

All measurements are approximate. I usually just add equal amounts of flour to liquid.

Bake for 15-30 minutes depending on size. Do not over bake!! They should be a little moist inside when you take out the knife.

You can substitute applesauce for ½ the butter for a lower fat option in the chocolate chip cookies.
