Rice Crepes
1/2 cup rice flour add 1 tbsp sugar and beat in 2 eggs
add 3/4 cup milk (any milk almond, rice or cow)
put in fridge for 15 minutes
use a non stick pan
I have found that frying these crepes in butter makes a nice brown color

Rice Tempura Batter
simple, crisp and fantastic
3/4 cup rice flour
3/4 cup gluten free beer
3/4 tsp salt
set aside for 10 minutes dredge your dried fish or vegetable threw the batter
make sure your oil is hot! 350F

Co's Cookies

1cup rice flour
1/2 cup quiona flour
1/2cup coconut flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup room temperature butter
1/2 cup white sugar
1/2 cup loose pack brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups Semi-Sweet Chocolate Chips

follow traditional cookie method bake at 350F

Peanut Butter Oatmeal Cookies
I have just perfected this recipe. bake 20 minutes for crunchy cookies and about 18 for a softer cookie.
Beat  1/2 cup butter into 1 cup peanut butter until light and creamy
add 1/2 cup brown sugar and 1/2 cup white sugar again until light and creamy beat in 1 egg
add dry ingredients
1 cup oatmeal
1 tsp baking soda
1/2 tsp salt
1 cup rice flour

bake at 350F

Quick Cake
Very quick and delicious with fruit and whipping cream or your fav icing!
Beat 1/2 cup butter until fluffy
sift into beater bowl
1 3/4 cups coconut flour
1/2 tsp salt
1 cup sugar
add 3 eggs
1/2 - 3/4 cups milk
add 11/2 tsp baking powder
pour into greased tube pan and bake
at 375F for about 20 minutes

***coconut flour requires more liquid than other flours start with 1/2 cups milk and add until batter is pourable sometimes it requires almost 1 cup.
***rice flour works well for this recipe reduce eggs to 2.

Co’s Pina Colada Cupcakes

coconut yogurt, pineapple,
organic eggs, olive oil, sugar, rice flour, organic quinoa flour, baking powder, vanilla, organic coconut.
Icing: sugar, butter, cream, shredded organic coconut

Co’s Chocolate Brownies

rice flour, cocoa, sugar, organic eggs, vegetable margarine, butter, milk, olive oil, vanilla, sea salt, baking powder.

Icing: sugar, cocoa, butter, vanilla, cream.

Co’s Vanilla Quinoa Muffins

vanilla yogurt,organic raw cane sugar, organic eggs, olive oil, rice flour, organic quinoa flour, baking powder.

***hint*** when baking with rice flour start your baking in an oven 25 degrees hotter and reduce the heat to recommended baking temperature after 3 -15 minutes depending on the overall bake time. This will help to create a nice finish to breads, brownies and cakes..
