Fresh Cranberry Sauce

Yields about 1 ½ cups

1 bag of fresh organic cranberries (8 oz or 227g)
3/4 cup water

1/2 cup coconut sugar or brown sugar
Zest from one orange

In a medium saucepan, bring water and sugar to a boil.  Add cranberries and orange zest.  Bring to a boil until berries burst.

Reduce heat and simmer for 10 minutes.

For a chunkier sauce, mash with a fork; for a smoother sauce you can transfer to a blender and blend until smooth.

Transfer to a bowl and garnish with more orange zest.

Keep refrigerated. Sauce will thicken as it cools.  This can also be made the night before.

*can also substitute stevia equivalent for less sugar
