Bean curry

I love green beans and this bean curry is one of my favourite ways of cooking beans.Serve with roti or as an accompaniment to rice and dhal.

Ingredients

    • 500g of green beans, sliced

    • 2-3 tbsp. oil (peanut, sunflower, canola)

    • 1/4 tsp each mustard, cumin and fenugreek seeds

    • 1/2 medium onion, chopped

    • 1 stalk of curry leaf, leaves picked

    • Salt to taste

    • 1 level tsp turmeric powder

    • Chilli powder or fresh green chilli to taste (optional)

Method

    1. Heat oil.

    2. Add mustard, cumin and fenugreek.

    3. Then add onion, turmeric, salt and chillies. Stir fry till onion just starts to soften.

    4. Finally add the beans. Stir well and cover.

    5. Cook over low heat till bean is cooked.

    6. Increase heat and stir fry until beans start to caramelise.

Variations

    1. Add 2 cloves of garlic and 2 cm piece of ginger, minced and added with the onions in step 3.

    2. Add a chopped tomato with the beans in step 4.

    3. Leave out the turmeric.

    4. Add potatoes with the beans in step 4.
