Carrot Zucchini Cake Bars

Ingredients:

-- 1 1/2 cups flour
-- 1 tsp Baking Powder
-- 1/2 tsp Baking Soda
-- 1 tsp Cinnamon (or 1/2 tsp Cinnamon, 1/2 tsp ginger)
-- 1/2 tsp salt (optional)
-- 1/4 cup oil
-- 1/4 cup cinnamon applesauce (or plain)
-- 2 eggs
-- 1/4 cup honey
-- 1/4 cup brown sugar
-- 1/2 cup granulated sugar
-- 1 cup finely shredded carrots (2-3 carrots depending on size)
-- 1 cup finely shredded zucchini (1 medium)

Directions:

-- Preheat oven 350 and grease the bottoms and sides of a 13x9 pan
-- Combine the first 4 ingredients in a large  (and salt if using) and set aside.
-- In another bowl, combine the eggs, the sugars, honey, oil, and applesauce.
-- Stir in the zucchini and carrots.
-- Add the zucchini mixture all at once to the flour mixture and stir gently just until moistened, making sure all the flour mixture is combined (especially at the bottom) but DO NOT over mix!!
-- Spread the mixture into the prepared pan
-- Bake 15-20 mins (check at 15) Mine was done by 17. Ovens will vary though....
--Cool before frosting.
