Black Pepper Strawberries and Goat Cheese Crostini


--1 loaf French Baguette cut into 1 inch slices
--1 1/2- 2 cups Fresh Strawberries rinsed, hulled and sliced
--2-3 oz Honey Goat Cheese (can use regular goat cheese)
--Fresh Ground Black Pepper
--2-3 Tbsps Balsamic Vinegar
-- 1 tsp sugar
--1 Cup Balsamic Vinegar
-- 1 TBSP  Sugar


--Place strawberries in bowl and sprinkle with fresh black pepper along with the 2-3Tbsps of Balsamic Vinegar and Sugar. How much you use will greatly depend upon how many strawberrries you are using.  Set the strawberries aside and let them sit for at least 30 minutes (an hour is even better)
--Pre heat oven to 375 
--Lightly brush baguette slices with some olive oil and bake until lightly toasted. Allow the slices to cool completley.
--Make the Balsamic Reduction:
            --Heat the 1 cup of Balsamic Vinegar and sugar to a boil
            --Reduce the heat to medium low stirring occassionally and 
            --simmer for 20-30 minutes.
            --Remove from heat...sauce will thicken as it cools 
--Lightly spread some goat cheese on each baguette slice and top with two sliced strawberries and drizzle with balsamic syrup reduction. 
--Refrigerate and serve within 1 hour for best results.
