Baked Tilapia with Fire Roasted Tomatoes

  • 4-6 Tilapia Fillets
  • 1 14oz can Fire Roasted Tomatoes
  • 1/2 onion quartered and sliced
  • 3 garlic cloves minced
  • 4-6 slices of Prosciutto or Deli Ham
  • Italian Cheese for topping (optional)
  • Preheat oven to 425
  • Pat dry fillets and season with desired seasonings. I use S&P, a little paprika and some Italian seasoning.
  • When the oven is ready, put the fish in the oven and set a timer for 6 minutes
  • While the fish is in the oven, heat a little oil in a pan over medium high heat. 
  • Sautee the onions until translucent and soft for about 4 minutes. Add the garlic, (be careful not to burn it) 
  • Add the can of fire roasted tomatoes and continue to stir and heat the sauce until bubbly. (adjust temperature as needed)
  • Take the fish out of the oven. 
  • Top each fillet with a piece of Prosciutto or ham (Often Prosciutto is expensive, so I use ham a lot...either is really fine)
  • Top each fillet with a spoonful of the tomato mixture and then a sprinkle of Italian cheese if desired. 
  • Return to oven and finish cooking an additional 8-10 minutes or until cheese has melted and fish easily flakes with fork.
